In the sun-drenched archipelago of Malta, where ancient traditions infuse every kitchen with centuries of culinary wisdom, *Stuffat tal-Fenek* stands as the island’s most cherished treasure—a slow-braised rabbit stew that captures the very essence of Mediterranean terroir. This artisanal dish transforms humble rabbit into something transcendent, as tender meat surrenders to a velvety tomato sauce enriched with robust red wine and herbaceous wild herbs harvested from Malta’s limestone cliffs. To savor this national dish is to taste the soul of an island where every drizzle of golden olive oil and every aromatic bay leaf tells the story of a proud culinary heritage passed down through generations of devoted home cooks.
Ingredients (Serves 4)
- 1 whole rabbit (about 1.5kg), cut into pieces
- 400g ripe tomatoes, crushed
- 2 large onions, roughly chopped
- 4 cloves garlic, crushed
- 250ml dry red wine
- 2 tbsp tomato paste
- 3 bay leaves
- 500g potatoes, peeled and quartered
- 3 tbsp olive oil
- 1 tsp fresh rosemary, chopped
- 1 small carrot, diced
- Salt and black pepper to taste
Method
- Heat olive oil in a large heavy pot over medium-high heat and brown the rabbit pieces on all sides until golden
- Remove the rabbit and set aside. In the same pot, sauté the onions and carrot until softened, about 8 minutes
- Add the crushed garlic and rosemary, stir for one minute until fragrant
- Pour in the red wine, scraping up the browned bits from the bottom, and let it reduce by half
- Add the crushed tomatoes, tomato paste, and bay leaves, then return the rabbit to the pot
- Season with salt and pepper, cover, and simmer on low heat for 1.5 hours
- Add the quartered potatoes and continue simmering for another 30 minutes until tender
- Taste and adjust seasoning before serving
Tips
Best served with fresh crusty bread to soak up the rich sauce. For even deeper flavour, marinate the rabbit in wine overnight.
