Add the pappardelle and cook according to the package instructions until al dente. Reserve about 1/4 cup of the pasta cooking water, then drain the pasta and set aside. While the pasta is cooking, heat a large skillet or pan over medium heat. Add a drizzle of olive oil, then add the onion. Cook for about 5 minutes, until softened and translucent. Stir in the chilli, and cook for an additional 1-2 minutes, until fragrant. In the same pan, add a little more olive oil if needed, then add the ham. Stir in the tomato concentrate, and add a little pasta water Pour the Cuina d’Oro cooking sauce into the pan with the onions and chilli. Bring the mixture to a simmer, then reduce the heat and let it cook for about 5 minutes, allowing the flavors to meld. Add the cooked pappardelle to the pan with the sauce, and gently toss to coat the pasta evenly. If the sauce is too thick, add a little of the reserved pasta cooking water to loosen it up.
