Ingredients

  • 250g Kolios Greek Yoghurt
  • 1 finely diced onion
  • 90 ml olive oil
  • 150g sliced mushrooms
  • 10 sun-dried tomatoes (To be placed in separate bowls)
  • 8 diced tomatoes
  • 10ml dry white wine
  • 1 bunch of finely chopped basil
  • 3 tbsps kuhne apple cider vinegar
  • Salt and pepper
  • ½ tsp sweet paprika
  • 5g sugar

Instructions

Heat 2 tbsp of olive oil in a deep pan and sauté the chopped onion and garlic for 3 minutes.

Add the mushrooms and half of the sun-dried tomatoes.

Sauté for an additional 3 minutes.

Add the diced tomatoes, white wine, vinegar, ½ cup of water and half of the chopped basil. Season to taste, add the sugar and paprika, then simmer for 40 minutes.

Place all ingredients in a blender with 2 tbsp of olive oil and blend until smooth.

Greek Yogurt Sauce:

Combine the remaining sun-dried tomatoes and basil and add the Delta Greek yogurt with 2 tbsp of olive oil. Mix all together and add salt and pepper.

Pour in a soup bowl and top with a dollop of Kolios Greek yogurt sauce.
