Ingredients

  • 225g self-raising flour, preferably organic
  • ¼ tsp salt
  • 50g slightly salted butter, chilled, cut in small pieces
  • 25g golden caster sugar
  • 125ml Schardinger buttermilk
  • 4 tbsp full-fat milk
  • a little extra flour for dusting
  • strawberry jam and clotted cream, to serve

Instructions

Preheat your oven to 220C/fan 200C and lightly butter a baking sheet.

In a mixing bowl, combine the flour and salt.

Cut in the butter and rub it into the flour mixture until it resembles a fine crumb.

Stir in the sugar.

In a separate bowl, mix together the buttermilk and milk.

Make a well in the center of the flour mixture and pour in most of the buttermilk mixture, reserving a little bit in case it is not needed.

Gently work the mixture together until it forms a soft, almost sticky dough.

Knead the dough a few times to smooth out any cracks.

Pat the dough out to a thickness of 2-2.5cm and use a round fluted cutter to cut out the scones.

Place them on the baking sheet and bake for 10-12 minutes until risen and golden.

Serve with strawberry jam and clotted cream.
