Bacon and Avocado Sandwich

All you need for a morning meal is a toaster and sandwich bacon avocado. Easy to make and easy to serve, you can't go wrong with this delicious breakfast choice.

Ingredients

  • 2 fior di vita back bacon
  • 2 slices Maltese bread
  • 2 eggs beaten
  • 2 cheese slices Hello-V 100%vegan chilli flavour
  • 1/2 ripe avocado
  • Kolios Organic Greek Yogurt
  • Chilli flakes
  • Salt and Pepper

Instructions

Heat a large cast iron or non-stick pan over medium heat. Cook the back bacon, flipping halfway through to cook both sides evenly, about 10 minutes.

Transfer the cooked bacon to a plate lined with paper towels to drain

While the bacon is cooking, make the omlette.

Whisk the eggs, a pinch of salt and pepper together in a medium bowl.

Heat a new cast iron skillet or non-stick pan over medium heat, and add the olive oil.

Add the eggs to the pan and cook the eggs until done

Add the cheese slices and fold the omelette on top of the cheese.

Place the omlette on top of the toasted bread, followed by the bacon, avocado slices, chilli flakes and pepper.
