A vegetarian ciabatta that can be made for a quick lunch by the beach or made ahead and taken on a Sunday afternoon trip!

Ingredients

  • 150 g spinach
  • 5 cherry tomatoes
  • golden drop olive oil
  • salt and pepper
  • 1 ciabatta
  • 50g fior di vita snowwhite blue cheese
  • rucola
  • Roger's hand cooked chips

Instructions

Cut the ciabatta in half and toast both sides in a pan using some olive oil

Cut the gorgonzola into pieces and spread it on the bread.

Add the rucola on top

Chop the spinach and cut the tomatoes in half

Heat the oil in the pan and add the tomatoes and saute for 2 mins

Add the spinach and saute for another 2-3 mins

Season with salt and pepper

Serve accompanied with some Roger's hand cooked chips
