This simple recipe for Zucchini Spaghetti is super quick to prepare, and it is perfect for those nights when you don’t have a lot of time to cook dinner for the family, but still want to serve something healthy and delicious

Ingredients

  • golden drop olive oil
  • 2 large zucchini thinly sliced,
  • 70g freshly grated parmesan
  • 200g cooked spaghetti
  • 1/3 cup lora green olives sliced
  • half red chilli pepper
  • 2 red elmar anchovy fillets
  • 2 garlic cloves thinly sliced
  • 1 cup pasta water
  • salt & black pepper to taste
  • 1 tbsp of lemon juice
  • 1/3 cup finely chopped parsley

Instructions

cook zucchini on medium heat in olive oil until softened and slightly golden around the edges

add the sliced garlic and green olives & cook for 1-2 mins

Cook the pasta in salted boiling water until al dente.

Add the pasta water, cheese and herbs and finish cooking pasta in the sauce for another 2 minutes.

At the end, add the lemon juice and taste and add additional seasoning to your liking.
