The sweetness of the earthy beetroots is a perfect match for the peppery punch of goat cheese, creating a beautiful balance of sweet and savory.

Ingredients

  • Kuhne beetroots
  • 1 acqua & farina brisee
  • 1 large onion, thinly sliced
  • Salt and pepper to taste
  • 80g walnuts / hazulnuts
  • 2 large eggs
  • 200ml cucina d'oro cooking sauce
  • 150g fior di vita goat cheese
  • Rucola
  • 1 tbsp honey

Instructions

Heat the oil in a pan on low heat. Add the onions, season with salt and pepper, and sauté for 20 minutes, stirring occasionally.

Spread the beetroots and onions on the dough

In a bowl, whisk together the eggs and cooking sauce and season with some salt and pepper.

Pour the egg mixture onto the dough over the beetroots and onion.

Dot the goat cheese over the top and bake for 30 minutes until set.

Remove from the oven and let it rest for at least 10 minutes.

Sprinkle with some rucola, a drizzle of honey, and serve warm.
