Risotto bil-Ful – Broad bean Risotto

Risotto is one of our favourite dishes. It always amazes me how a handful of rice, a tiny onion, some stock, beans, sausage and a grating of excellent cheese can produce something so amazing.

Risotto is one of our favourite dishes. It always amazes me how a handful of rice, a tiny onion, some stock, beans, sausage and a grating of excellent cheese can produce something so amazing.

Ingredients

  • 1 tbsp Golden Drop olive oil
  • 100 g bacon, skinless and chopped
  • 1 Onion, chopped
  • 2 cloves garlic, chopped
  • 350 g cooked maltese sausage
  • 300 g arborio or short grain rice
  • 1 l chicken stock, hot
  • 1.1 kg beans in pods (300 g peeled)
  • 2 tablespoons fresh parsley, chopped
  • 80 g Parmesan cheese, grated
  • 50ml Milk Cream Cheese
  • 50ml Cucina D'Oro Cooking Sauce

Instructions

Heat the oil in a low saucepan and add the onion, garlic, bacon and cooked Maltese sausage. Let cook for 5 minutes.

Add the rice and stir until completely coated with the saucepan mixture.

Add a ladle spoon of stock to the rice and stir until absorbed.

Add the beans and another ladle of stock and stir until the liquid is absorbed again.

Keep adding a ladle each time until you use all of the stock

Add the cream cheese, cooking sauce and half the Parmesan cheese and stir.

Serve with more grated Parmesan cheese, olive oil and parsley sprinkled on top.
