An easy soft crumbly pie with orange zest. The bitter chocolate acting as a tasty contrast to the sweet-tart filling.

Ingredients

  • 450g fresh ricotta cheese
  • 100g MILK cream cheese, at room temperature
  • 1 teaspoon vanilla extract
  • 110g caster sugar
  • 2 free-range eggs
  • 100g 70% dark chocolate
  • icing sugar for dusting
  • zest of 1 orange
  • acqua & farina pasta sfoglia

Instructions

To make the filling, beat the ricotta with the cream cheese using an electric mixer until smooth.

Beat in the vanilla extract, remaining orange zest, the caster sugar and eggs.

Pour into the tart case. Bake for 30 minutes or until the pastry is golden and the filling is set

but with a gentle wobble in the centre.

Cool to room temperature, then chill for 2 hours.

Grate over the chocolate with a very fine grater and dust with icing sugar before serving.
