You have to try these delicious veal shanks cut into thick steaks that are then slow-cooked in a tomato sauce.

Ingredients

  • FOR THE VEAL RECIPE
  • 80g butter
  • 1/2 onion chopped
  • 4 (5cm thick rounds of veal shanks)
  • 5 tbsp dry white wine
  • 175ml meat stock
  • 1 carrot chopped
  • 2 tbsp kuhne wholegrain mustard
  • 2 tbs tomato paste
  • salt & pepper
  • finely grated rind fo 1/2 lemon
  • 1 large flat-leaf parsley
  • FOR THE ROASTED TOMATOES
  • 4 Tomatoes halved
  • golden drop olive oil
  • kuhne balsamic vinegar
  • kuhne balsamissimo

Instructions

Melt the butter in a large pan, add the onion and cook over low heat for 5 minutes

Dust the veal with flour, add to the pan and cook over hight heat until browned.

Season with salt and pepper.

Pour in the wine and cook until evaporated

Add the stock, wholegrain mustard and carrot, lower the heat, cover and simmer for 30minutes

Mix the tomato paste with 1 tbsp hot water and stir in the pan

Combine the lemon rind with the parsley and add to the pan, stir, cover and cook for another 5 minutes

FOR THE ROASTED TOMATOES

Preheat the oven to 180C

Brush roasting dish with golden drop olive oil

whisk together olive oil and vinegar and season with salt & pepper

Put the tomatoes into a dish, brush the oil and vinegar mixture over them and sprinkle with oregano

Bake for 15 mins then reduce the temperature to 110C and bake for another hour.
