Ingredients

  • 2.5kg pork belly
  • Golden drop olive oil
  • 2 carrots
  • 2 onions
  • 8 cloves garlic
  • Fresh rosemary
  • Broccoli
  • 4 potates (quartered)
  • Made for meat – bacon and Jalapeno sauce

Instructions

Score the skin into a diamond shape

Roughly chop onions, crushed garlic, chopped carrots and place into an oven dish and top with Rosemary

Season with salt and pepper

Rub olive oil then pour in chicken stock and put into the oven at 220 degrees Celsius for 50 minutes

Boil and drain potatoes.

Add olive oil, turn the oven down to 190 C and cook for 1.5hrs

Fry some broccoli

Serve with Made for Meat – Bacon and Jalapeno
