Balbuljata is a traditional Maltese breakfast consisting of eggs and tomatoes. It's a simple and quick meal that even kids will enjoy. Serve with fresh Maltese bread.

Ingredients

  • 3 tomatoes
  • 1 onion finely chopped
  • 1 tbsp golden drop olive oil
  • 20g butter
  • 2 cloves garlic
  • 4 eggs
  • salt and pepper
  • 1 tbsp parsley
  • fresh Maltese bread
  • Fior di Vita peppercorn cheese
  • Fior di Vita goat cheese
  • Milk Khefir yoghurt

Instructions

Peel, deseed and chop the tomatoes

Cook the onion in the oil and a little butter

Add the garlic and the tomatoes.

Cook all for a further 5 minutes.

Beat the eggs lightly with salt and pepper and pour them on the tomatoes and onion, adding the parsley.

Stir continuously over low heat until the eggs are barely set.

Add some fior di vita black peppercorn cheese

Continue to stir off the heat.

Top with fior di vita goat cheese

Serve with fresh Maltese bread
