Olive Dip

Here’s a quick easy dip to snack on whilst watching those Euro games, or as a bbq appetizer.

Here's a quick easy dip to snack on whilst watching those Euro games, or as a bbq appetizer.

Ingredients

  • 1/2 cup Lora green olives pitted
  • 1/2 cup FOS black olives pitted
  • 1/4 cup golden drop olive oil
  • thyme
  • salt and pepper
  • 225g for di vita feta cheese
  • 1/2 cup golden drop olive oil
  • 1/4 cup milk cream cheese
  • 1/4 cup water
  • 2 tbsp honey
  • lemon zest 1/3 lemon
  • Slabs chunky crisps

Instructions

Preheat the oven to 200C. Add olives to baking dish, top with olive oil, salt and pepper. Mix together until all olives are coated evently. Add thyme. Place in oven for 10minutes. Remove from oven after 10 minutes and set aside.

Add crumbled feta, cream cheese, water, 1/2 cup olive oil to a food processor. Process for 2-3 minutes. Add lemon zest, black pepper and honey to the mixture and process for 2 minutes.

Add feta dip to a bowl and add roasted olives on top. Also add the olive oil from the dish on top of the dip.

Garnish with thyme, oregano and black pepper.

Serve with bread and Slabs chunky crisps
