Heat the oil and fry the onion Add the tomatoes and cook gently for 30mins Remove 2 tbsp of this sauce to moisten the ingredients of the filling. Add the reserved sauce to the bread crumbs, hard-boiled egg, capers, olives, anchovy, herbs and the beaten raw egg and mix well. Fill the calamari with this mixture and secure the open end with cocktail sticks. Add to the hot tomato sauce and simmer until cooked, about 45 minutes.
