Chicken Cacciatore

An easy to make rustic Chicken Cacciatore enjoyed by the whole family. The chicken breast is served on a bed of mashed potato and arugula salad.

Ingredients

  • golden drop olive oil
  • 2 knobs of butter
  • flour
  • 1 onion diced
  • 4 garlic minced
  • 450g tomato sauce
  • 1 cup chicken stock
  • 2 large tomatoes diced
  • chilli flakes
  • 15 Lora Olives sliced
  • 1 tbsp vitaly's capers
  • 5 lemon slices
  • rucola
  • Kuhne viniaigrette Zesty Herbs
  • FOR THE MASHED POTATOES
  • 3 large potatoes
  • Fior di Vita 4 cheese
  • milk
  • salt and pepper
  • butter

Instructions

Cut two chicken breasts in half

Season the flour with salt and pepper

Add the chicken to the flour and remove any excess flour

Add olive oil to pan

Cook chicken for 2 minutes each side and remove from pan and allow to rest

In the same pan as the chicken, sweat out onions and garlic in olive oil

Deglaze with wine

Add diced tomatoes, chicken stock and tomato sauce and reduce until gravy-like

Add diced lemon, capers and olives

Season to taste with salt.

FOR THE MASHED POTOATO

Boil the potatoes

Add some milk, butter, 4 cheese and season.

Mash until you achieve the desired consistency. Add more milk if too lumpy.
