A classic that never ceases to amaze. And while we're in strawberry season, why not try this ultimate dessert treat!

Ingredients

  • 2 eggs
  • 75 g caster sugar
  • 75 g self-raising flour, sifted
  • 250 g mascarpone cheese
  • 250 g fresh, cleaned and chopped strawberries
  • 2 tablespoons icing sugar, sifted
  • Thinly sliced strawberries
  • Icing sugar, for sieving

Instructions

Preheat the oven to 200 ° C. Roll out a 25 cm x 30 cm tray and cover the bottom with parchment paper.

In a bowl beat the eggs, then add the sugar and beat well until you have a light creamy mixture.

Slightly add the flour and slowly add it to the egg and sugar mixture (fold in) with a spoon.

Pour the mixture into the prepared tray, smooth the surface and bake for 6-8 minutes. Don’t overcook the Pan di Spagna as it will start to crack when you roll it.

Place the strawberries in a bowl and mash a little with a fork.

Add icing sugar and stir.

Also add the mascarpone cheese and mix everything well together.

Sprinkle a large piece of parchment paper with a little sugar and turn the Pan di Spagna, peel off the paper from the bottom of the sponge and cut off the four ends with a knife.

Spread the filling mixture over the sponge cake without reaching the ends.

Roll slowly and with the help of the paper itself from the short side.

Place the roly poly on a plate with the open end at the bottom.

Place the thingly slices Strawberries on top and sift a little icing sugar.
