Ingredients

  • knob of butter
  • 1 lemon juice
  • 1 lemon rind
  • 1/2 milk mascarpone
  • 250g Fettucine
  • fresh parsley
  • grated parmesan

Instructions

Cook the fettuccine in a pan of boiling salted water according to the packet instructions, then drain and return to the pan.

Meanwhile, finely grate the zest from 1 lemon into a bowl, then squeeze in the juice from it.

Melt a knob of butter to a hot pan

Add the lemon rind and the lemon juice.

Cook for some minutes

Add the mascarpone and some pasta water

Season with salt

Add the cooked fettuccine

Sprinkle some parmesan cheese and parsley.

Mix well.
