Did you know that In Malta, as long as 1519, lasagne was on the menu at Santo Spirito hospital in Rabat. Patients were served lasagnj, cheese, veal and wine. This Lasagne version, although without meat, is just as tasty…can we dare say even tastier? There..we said it..

Ingredients

  • FOR THE PESTO SAUCE
  • 100g basil leaves
  • 50g pine nuts
  • 50g parmesan cheese
  • 4 cloves garlic
  • 4 tbsp olive oil
  • FOR THE LASAGNE RECIPE
  • lasagne sheets
  • 125ml Cucina d'Oro cooking sauce
  • 400g Maltese Ricotta
  • 250g for di vita mozzarella
  • 2 tbsp grated parmesan

Instructions

First make the pesto by blending the basil, pine nuts, parmesan, garlic and olive oil until smooth, adding a little water if necessary.

Pour 125ml cooking sauce into an ovenproof dish and add some more to the ricotta.

add the mozzarella and parmesan to the ricotta and stir in well.

Then start to make layers in the dish as follows: pasta - pesto - ricotta mix till the dish is full and you've used all the ingredients

Bake for 25-30 minutes till golden and bubbling on the surface
