Here's a simple healthy recipe made from ingredients most of us have on our shelves. Also ideal for lent.

Ingredients

  • 3 Potatoes,
  • 1 onions
  • 1 garlic
  • 500g fresh tomatoes peeled and chopped
  • 200g tinned tuna fish in olive oil
  • 1 tsp sugar, salt and pepper
  • 2 tbsp Vitaly's handful of drained capers
  • 2 tbsp of sliced FOS black olives
  • 2 tbsp sultanas
  • chopped fresh parsley, mint or basil
  • golden drop olive oil

Instructions

chop the potatoes, onions and garlic and place in a heavy saucepan

add all the tomatoes

Pour over 2 or more tablespoons of olive oil, sugar, salt and pepper and paprika.

Bring to the boil then cover and simmer gently until the potatoes are just cooked.

Drain some of the olive oil from the tuna, break it into smaller pieces and add to the stew together with the olives, capers and the fresh herbs

Heat thoroughly but do not boil

Eat hot with crusty bread
