Mini Beef Wellingtons and White Parmiggiana with Fresh Cheeselets

Staying inside this Valentine’s? Here are two recipes we recommend. A white parmiggjana with Maltese Fresh gbejniet as a starter and an easy Mini Beef Wellingtons with Patata l-Forn (roast potatoes). Both are so easy to prepare. Open a nice bottle of wine and enjoy your evening!

Ingredients

  • PARMIĠĠJANA
  • 2 courgettes
  • 1 clove garlic
  • 1/2 tsp oregano
  • 1 tbsp pine nuts
  • 200ml cucina d'oro cooking sauce
  • 2tbsp parmesan cheese
  • 2 fresh white cheeselets
  • chopped parsley
  • 2 tbsp olive oil
  • salt & pepper
  • MINI BEEF WELLINGTON
  • 4x200g beef steaks
  • potatoes
  • sweet paprika
  • fennel seeds
  • salt and pepper
  • olive oil 1 tbsp
  • 1 onion minced
  • mushrooms 2 cups minced
  • pepper 2 diced
  • garlic 2 cloves
  • worchestershire sauce 1 tsp
  • salt 1/2 tsp
  • pepper 1 tsp
  • baronesse cheese slices
  • egg wash
  • bake at 200c for 20minutes
  • SAUCE
  • kerrymaid butter 2 tbsp
  • flour 2 tbsp
  • milk 3/4 cup
  • fior di vita 4 cheese - 1/2 cup

Instructions

Cut the zucchini into 5mm thick wheels and fry in olive oil.

Season with salt and pepper

Add the garlic and spices, pour in the cream and bring to a boil.

Lower the heat, add the cheese and pinenuts and simmer until the cream thickens.

Fill 4 small forms with oil. Fill with layers of zucchini and fresh maltese cheeselets.

Bake in a moderate oven, 180C for about 15 minutes

BEEF WELLINGTON

Cut the potatoes in slices

Place in a baking dish and add olive oil

Sprinkle sweet paprika and fennel seeds and bake at 200C for 45minutes

Season the beef with salt and pepper.

Heat the oil in a 12-inch skillet over medium-high heat.

Add the beef and cook for 10 minutes turning the beef over once during cooking.

Remove the beef to a plate.

Let cool.

Heat the oil in a 10-inch skillet over medium heat.

Add the onions, pepper, mushrooms and garlic and worshestershire sauce.

Cook until the mushrooms are tender, stirring often.

Remove the mushroom mixture from the skillet and let cool.

Unfold the pastry sheets.

Place 1 baronesse cheese slice in the center of each pastry square.

Cut each pastry sheets into 2 squares .

Divide the mushroom mixture evenly among the pastry squares.

Top each with 1 filet mignon.

Overlap pastry into a pocket and press to seal. Brush with the egg.

Repeat with the remaining pastry.

Place the pastry-wrapped beef seam-side down on the prepared baking sheet.

Bake for 20minutes at 200°C or until the pastry is golden brown

Serve immediately.
