Orange Cake – Kejk tal-Laring

Oranges are in season right now so we decided to make an orange cake. Really easy to make. Combined with yoghurt this is a perfect dessert!

Oranges are in season right now so we decided to make an orange cake. Really easy to make. Combined with yoghurt this is a perfect dessert!

Ingredients

  • 50g breadcrumbs
  • 200g sugar
  • 100g ground almonds
  • 1.5 tsp baking powder
  • 200ml Golden Drop Sunflower Oil
  • 4 eggs
  • Zest of 3 oranges
  • Zest of 1/2 a lemon
  • SYRUP
  • Juice of 3 oranges
  • Juice of 1/2 a lemon
  • 75g suger
  • 2 cloves
  • 1 cinnamon stick
  • YOGHURT
  • Kolios Greek Yoghurt
  • Crushed pistachios
  • Grated dark chocolate
  • Maltese Honey

Instructions

Stir all the dry ingredients together in a large bowl.

In a separate bowl whisk the oil, grated zest and eggs together and pour over the dry ingredients and beat them all together till smooth.

Pour the mixture into a 23cm well greased and base lined tin.

Put it into a cold oven, a bake it at 180C for 40minutes or until it is firm and golden and a skewer poked into the middle comes out clean.

THE SYRUP

Simmer syrup ingredients for 8 minutes or till thickened but still runny.

When the cake is cooked, remove it from the tin, pierce it all over with a skewer and gently spoon over syrup until it is all soaked up.

Serve accompanied with some greek yoghurt with crushed pistachios, grated chocolate and Maltese honey on top.
