Ingredients

  • FOR THE PASTRY
  • 480g plain flour
  • 300g kerrymaid butter
  • 120g sugar
  • 1 egg
  • 1 tsp lemon zest
  • 1 egg
  • sugar
  • FOR THE MINCEMEAT
  • 240g kerrymaid butter
  • 240g apples
  • 240g raisins
  • 240g currants
  • 240g golden raisins
  • 120g candied peel
  • 240g sugar
  • 50g ground almond
  • 8g mixed spice
  • 150ml brandy

Instructions

FOR THE MINCEMEAT - Combine all ingredients except for the brandy in a medium-sized pot and bring to a boil.

Simmer for 2 hours

Stir in the brandy

Spoon the mincemeat into sterilized jars.

Notes

Mincemeat is traditionally stored for several months before using to allow time for the flavours to deepen, however, this mincemeat is also delicious eaten within just a few days.
