Qaghaq tal-Ghasel – Honey Rings

Here they are..the traditional Qagħaq tal-Għasel, also known as honey rings. Filled with treacle/golden syrup and other festive ingredients. We have them all year round but especially around Christmas time. We like the pastry particularly thin but feel free to adjust according to your taste. The filling is divine! Don’t be shy..give it a try..

Ingredients

  • FOR THE PASTRY
  • 400g plain flour
  • 50g Kerrymaid Butter
  • 3 egg yolks
  • water
  • FOR THE FILLING
  • 400g golden syrup
  • 400ml water
  • 100 sugar
  • grated rind of a lemon and orange
  • 4tbps chopped hazelnuts
  • 1tbps aniseeds
  • 50g dark chocolate
  • 75g marmalade
  • 1 tbsp mixed spice
  • 175g semolina

Instructions

Bring all the ingredients except for the semolina to the boil while stirring.

Add the semolina very slowly stirring all the time.

Once boiled cook it for a couple of minutes longer, continuously stirring.

Once cooled, cover and refrigerate overnight.

Cut the pastry into 8 pieces and roll each into a rectangle.

Scatter a working surface with semolina and roll spoonfuls of the filling into a snake shape and roll it up.

Make a ring shape by pushing the two ends into each other

Cut slashes into the pastry around the ring

Bake at 180C for about 15 minutes.
