Scotch Eggs with a Maltese touch - an absolute favourite of ours. Hard or soft boiled eggs coated with Maltese sausage, breaded and deep-fried. Try them out and let us know!

Ingredients

  • 2 maltese sausage
  • 1 tsp chopped parsley
  • 2 hard/soft boiled eggs
  • 100g breadcrumbs
  • 50g plain flour, seasoned
  • 2 eggs, beaten
  • golden drop sunflower oil
  • Kuhne vinaigrette
  • rucola
  • sun dried tomatoes

Instructions

Remove sausage from casing

In a bowl break up the sausage meat with a fork.

Mix the parsley into the sausage meat then divide the sausage meat into 2 even sized portions.

Flatten into a rough circle.

Wrap around the boiled eggs encompassing completely.

Dip each 1 in flour, egg and then breadcrumbs, re-shape into a round .

Heat the sunflower oil to 160c and deep fry for 8 to 10 minutes, until golden and crispy

Drain onto kitchen paper.

Serve accompanied with rucola and sun dried tomatoes.

Drizzle with some Kuhne vinaigrette
