Penne with Maltese Sausage in a pastry plate

Ingredients

  • 200g cooked penne
  • Golden Drop Olive Oil
  • 1 small onion
  • 12 cherry tomatoes
  • 3 sun-dried tomatoes
  • 2 Maltese sausage
  • fresh rosemary
  • Salt and Pepper
  • 200ml Tomato Sauce
  • 1 Fior di Vita Mozzarella
  • 1 Acque e Farina Brisee

Instructions

Cook the pasta and leave it al dente

Remove all the water

Add the onions, tomatoes, sun-dried tomatoes and cook on a medium heat

Remove sausage from casing and add into the pan with the other ingredients

Add the rosemary, salt and pepper followed by the tomato sauce.

Mix everything together.

Cover the pan with acqua e farina brisee and allow the pastry to balloon.

Transfer to a preheated oven at 200C for 15 minutes.

Turn pan upside down. The ballooned pastry will be your serving plate.

Notes

Use a knife to cut the circumference of the pastry if it won't come off easily.
