Maltese Trifle

If we had to choose one of the most nostalgic desserts this would be it. A trifle is a layered dessert that contains a sponge cake covered with layers of custard, jelly, and cream. There are a lot of variations to this recipe, let us know how you like it best.

Ingredients

  • cooked sponge cake
  • 300g ricotta
  • 250ml fresh cream
  • 100g sugar
  • 1 pkt strawberry jelly
  • liquor of your choice
  • candied cherries
  • crushed cashew nuts
  • FOR THE CUSTARD
  • 600ml milk
  • 120g sugar
  • 40g custard powder

Instructions

For the custard - Put 3/4 of the milk and sugar in a casserole. Put the mixture on moderate heat until it starts to boil.

Dilute the custard powder in the remaining milk and add it to the boiled milk.

Cook for a few minutes stirring all the time.

Remove it from the heat and let it cool.

Slice the sponge thickly

Prepare the strawberry jelly following the instructions on the packet but using only 2/3 of the water indicated.

Pour the jelly mixture over the sponges and let them soak.

Add the custard

Cream together the fresh cream and ricotta in a mixing bowl.

Add the sugar and your chosen liquor followed by the desiccated coconut. Mix well.

Spread the ricotta mixture over the custardd

Decorate with cherries and cashew nuts.

Feel free to add Montare d'Oro whipping cream on top.
