No barbecue is complete without a side dish (or two). Here are 3 tasty and easy to make salads that will solve the salad dilemma at the next barbecue or party you go to.

Ingredients

  • RECIPE 1
  • 3 sliced tomatoes
  • salt and pepper
  • 1 small onion
  • half tsp ground cumin
  • 2 red elmar anchovy fillets
  • Khune caesar dressing
  • Kolios goat's cheese
  • Vitaly's capers
  • 2 hard boiled eggs (quartered)
  • RECIPE 2
  • 100g rucola
  • 3 large fresh figs (quartered)
  • 6 sliced parma ham
  • Kolios goat's cheese
  • Kuhne vinaigrette with zesty herbs
  • RECIPE 3
  • 100g rucola
  • 50 g sun dried tomatoes
  • 1 tsp oregano
  • salt and pepper
  • 1 fresh maltese cheeselet
  • 1 onion
  • 2 small aubergines
  • 1 large capsicum
  • Kuhne yoghurt dressing

Instructions

Recipe 1

Place the tomatoes in a salad bowl with onion.

Sprinkle over the cumin and mix in the anchovies.

Pour the dressing over the salad and mix well.

Garnish with goat's cheese, capers and boiled eggs

Line a baking tray with baking paper and arrange the Parma ham slices.

Bake in a hot oven for 8 minutes or until just crispy.

Leave to cool and chop up very coarsely.

Arrange the rocket leaves in 2 serving plates and top with figs, goats cheese and ham.

Drizzle over the vinaigrette and serve.

Quarter the capsicum and remove the seeds.

Place it together with the aubergines and onions skin side up under a hot grill and cook until skins are browned.

Leave to cool and then peel the capsicums carefully.

Combine tomatoes, rucola and oregano in a bowl and serve on a plate

Place the cheeselet in the middle.

Top with the grilled vegetables,

Pour dressing over the salad.
