We can’t get enough of them – so we love making these as part of a BBQ platter. Beat the eggs well. Add whitebait and season with salt and pepper. Mix well Heat some olive oil and add onion and garlic. Cook until golden and add them to whitebait mixture. Add parsley and mint and mix well. Drop big spoonfuls of the whitebait mixture into a hot saucepan with some olive oil. The whitebait should be cooked like pancakes, frying them once on each side.
