Tarja Moqlija – Fried Vermicelli Omelette

So you want to cook something really fast and easy and yet satisfying? Here’s your answer – Tarja Moqlija. This dish comes together without much effort and disappears just as easily. You might want to omit the bacon but we like that salty crunchy kick.

Ingredients

  • 250g fine vermicelli
  • Golden Drop olive oil
  • 1 small leek
  • 3 eggs
  • 25g grated cheese
  • 75g Fior di Vita 4 cheese shredded
  • 3 cloves garlic crushed
  • fresh parsley
  • 100g bacon cut into small pieces
  • salt and pepper
  • Kuhne gherkin relish (as a dip)

Instructions

Boil vermicelli in boiling water. Strain.

Put a little olive oil in a frying pan, add chopped leek, followed by garlic and bacon

Cook until bacon is golden or crispy (we like it crispy)

Back to the vermicelli, add the eggs, cheese and parsley and give it a good mix.

Pour a thin layer of olive oil into a large pan and heat on the stovetop over medium.

Fry vermicelli on medium heat until golden brown and crispy on both sides.

Serve piping hot!

Notes

If omelette is not cooked enough it will end up breaking up when you turn it. You can always use a plate to help turn it over.
