Stuffed to the brim artichokes! we love them especially when served with olives, capers, tuna, boiled potatoes and cauliflower drizzled with top notch olive oil. In a bowl mix together anchovies, olives, capers, bread, garlic, parsley, salt, pepper and tuna Add enough olive oil to get the stuffing to bind together. Prepare the green artichokes. Start by trimming the stem and removing the leaves at the base of the artichoke. Trim the top, thereby removing many of the sharp, prickly points. Pry the artichoke leaves open and stuff with the mixture. Place in a large pot over simmering water. Cover and steam for 1.5-hrs to 2 hours, depending on size of the artichokes. Serve with boiled potatoes, boiled cauliflower, tuna, capers and olives Drizzle Golden Drop olive oil on top.
