Broccoli and Blue Cheese Quiche

Here’s a meal-in-pie-form: a tasty quiche providing plenty of protein and a flaky crust. This recipe can be eaten hot from the oven or served in cold slices the next day.

Ingredients

  • 2 Leeks
  • 2 Spring Onions
  • Broccoli florets
  • 200g Ricotta
  • 100g Fior Di Vita Grated Cheddar
  • half a white gbejna (cheeselet hard)
  • 100g Fior Di Vita Snowwhite Blue Cheese
  • 4 eggs
  • 500ml skimmed milk
  • 2tbsp grated parmesan
  • nutmeg
  • salt & pepper
  • chopped parsley
  • Acqua & Farina Pasta Sfoglia

Instructions

Chop two leeks, two spring onions and saute till soft.

Cut some broccoli florets

Line a dish with pasta sfoglia

On the base put 200g ricotta, add 100g grated cheddar cheese, one half a grated white gbejna, add the sauted leeks and spring onions, the broccoli florets and 100g crumbled blue cheese.

Beat 6 eggs and mix with 500ml of skimmed milk,

Add 2 tbs of grated parmesan, a grating of nutmeg and season.

Add some chopped parsley.

Pour egg mixture on the pie and bake in a moderate oven 170C for around 40 minutes or till golden.
