Zeppoli

This year's St. Joseph's feast has been cancelled....but fear not! If you can't buy Żeppoli this year then try making them yourself. Follow our easy recipe to make these St. Joseph feast favourite!

Ingredients

  • 125g plain flour (sieved)
  • 1tbsp castor sugar
  • 250ml water
  • 100g Kerrymaid butter
  • grated rind of 1 orange
  • 3 eggs
  • FILLING
  • 300g ricotta
  • 100g black chocolate chopped
  • 100g candied peel
  • 100g chopped roasted blanched alomonds
  • 75g castor sugar

Instructions

Bring the water to the boil

Add the butter

Once butter has melted, pour in the flour and sugar and beat

COOL SLIGHTLY and using a blender beat in the eggs and grated peel until the mixture is smooth

Make balls out of the paste and bake at 200C for 20 minutes

THE FILLING

Mix together 300g ricotta with black chocolate, candied peel, almonds and sugar

Slit the cooked choux paste and fill with the mixture

Drizzle with the honey and sprinkle with nuts.

Notes

It is important to cool slightly before beating in the eggs
