Bring the water to the boil Add the butter Once butter has melted, pour in the flour and sugar and beat COOL SLIGHTLY and using a blender beat in the eggs and grated peel until the mixture is smooth Make balls out of the paste and bake at 200C for 20 minutes THE FILLING Mix together 300g ricotta with black chocolate, candied peel, almonds and sugar Slit the cooked choux paste and fill with the mixture Drizzle with the honey and sprinkle with nuts.
