Fried rabbit liver on bread.. Have you ever tried this ? You have to! It tastes even better on a Sunday morning but don't ask why...it simply does ?

Ingredients

  • 400g rabbit liver
  • bread slices
  • 2 garlic cloves
  • 100ml Golden Drop Extra Virgin Olive Oil
  • 100ml Carrob syrup
  • salt and pepper

Instructions

season rabbit liver with salt and pepper

fry in olive oil for a few minutes on each side without overcooking

remove liver form pan and set aside

in the same pan fry the garlic until golden

add the carrob syrup and mix

add the liver to pan for a few more minutes

rub the cut side of a garlic clove over the bread

drizzle with olive oil and grill

add cooked rabbit liver on bread and drizzle with the carrob syrup

Notes

The secret of tasty rabbit liver is the cooking time. Overcooking the liver will result in a chewy product which is definitely not what you're after. A hint of pink is what you're looking for.
