If you're thinking of feeding a crowd this festive season, why don't you try a different take on pork - cooked in milk and served with roast potatoes. We opted for buttermilk, which makes the pork even more tender and juicy.

Ingredients

  • 1.5kg pork loin (de-boned)
  • 1/2 tsp grated nutmeg
  • olive oil
  • 50g Kerrygold butter
  • 500ml Schardinger Buttermilk
  • 1 tbsp suger
  • 5 bay leaves
  • fresh thyme leaves
  • 5 cloves garlic
  • rosemary
  • zest of two lemons
  • salt & pepper

Instructions

Mix together zest of one lemon, fresh rosemary, garlic and olive oil

Make slits into pork loin and fill in with mixture

Mix the zest of the other lemon, nutmeg, thyme, sugar, salt & pepper together

Coat the pork loin with this mixture and rub gently all around

Add butter in a large pan and brown pork until golden brown on all sides.

Add the buttermilk followed by the bay leaves

Cover and cook for 2 hours

Slice and serve with roasted potatoes
