Here's an all year round winner ! A mouth watering stew with slow cooked tender octopus which can be served as a main course or as a sauce with spaghetti or penne.

Ingredients

  • 1 onion
  • 1 garlic
  • 150g tomatoes peeled and chopped
  • 100g black olives
  • 2 tbsp olives (sliced)
  • 2 tbsp capers
  • 50g tomato paste
  • Zest of 1 Lemon
  • water
  • Octopus (boiled for 20mins)
  • Marjoram
  • Basil
  • 300ml red wine
  • 200g potatoes (pre boiled)
  • 100g peas
  • 300ml red wine

Instructions

Fry onions and garlic until golden brown

Add tomatoes, olives, capers, tomato paste, lemon zest

Add some water and simmer for 10 mins

Add octopus (after boiling for 20mins)

Add marjoram and basil

Add red wine

Cover and simmer for 1 hour

Add potatoes, peas and wine

Cook on low for another hour
