Ingredients

  • 1 day old Maltese Bread
  • Tomato paste (kunserva)
  • 1 grilled aubergine cut in slices
  • 2 grilled zucchini cut in slices
  • Fior di Vita pepato cheese slices
  • fresh tomato slices
  • grilled red and yellow capsicum
  • FOS Greek kalamata sliced olives
  • Vitaly's capers
  • sun-dried tomatoes
  • Golden Drop Olive Oil

Instructions

Cut the top part of the bread and put it aside

Remove the inside

Spread the inside with tomato paste

add the first layer of aubergines, followed by zucchini, pepato cheese, tomatoes, capsicum, olives and capers.

Repeat with remaining veg.

Finally, add some sun-dried tomatoes

Put the lid back on

Rub bread with olive oil.

Bake for 15 minutes at 170 deg. celsius

Cut in half and serve
