An easy, pretty and very tasty treat loved by kids and adults

Ingredients

  • 250g butter
  • 300g caster sugar
  • 4 eggs
  • Half a tsp vanilla essence
  • 500g self-raising flour
  • 250ml Schardinger buttermilk
  • 300g icing sugar
  • 125ml buttermilk
  • 2 tbsp butter
  • Red food colouring
  • 250g coconuts
  • Strawberry jam

Instructions

Line a 15cm x 30cm cake tin and preheat oven to 170 C

Beat butter and caster sugar until you get a creamy consistency, add the vanilla essence and the eggs, one at a time

Sift the flour and slowly add to the butter mixture.

Add the buttermilk

Pour mixture into cake tin and bake for 35 minutes

Let cake cool and cut into 12 pieces

For the icing melt icing sugar with buttermilk, add the butter and cook bain-marie for 4 minutes

Remove from heat and add the food colouring until you get a dark red consistency.

Dip the cake pieces in the red icing and cover in coconut
