All hail the rabbit! Here's a succulent recipe with a secret ingredient...cocoa! Try this tasty rabbit casserole and guess what? We reserved some sauce for that irresistable spaghetti with rabbit sauce ! ūü§§

Ingredients

  • Flour
  • 1 rabbit cut in pieces
  • salt & pepper
  • 2 onions
  • 2 carrots diced
  • 4 garlic cloves
  • Fresh thyme and bay leaves
  • 1 tbsp of bitter cocoa powder
  • 3 tbsp sweet tomato paste
  • 1 tbsp sugar
  • 50cl fruity red wine
  • water
  • 200g peas

Instructions

Coat the rabbit pieces in flour seasoned with salt and pepper

In a pan fry the onions until golden

Add garlic and carrots.

Add rabbit and fry until browned.

Add thyme, bay leaves and cocoa and mix altogether

Add tomato paste and sugar followed by the red wine

Cover meat with water

Simmer for 75 minutes

Add peas and cook for a further 15 minutes

Serve with oven baked potatoes

Notes

You can reserve some of the sauce and serve it over cooked spaghetti.
