Ingredients

  • Olive oil
  • 2 leeks sliced
  • 1 garlic clove crushed
  • 1 tsp ground ginger
  • 1 tsp ground cumin
  • 900g pumpkin cut into cubes
  • 900ml vegetable stock
  • salt & pepper
  • greek yogurt

Instructions

Fry leeks in olive oil

Add garlic and continue cooking until leeks are tender

Add cumin and ginger

Add pumpkin and stir

Add the vegetable stock

Bring to a boil

Reduce heat, cover and simmer for 30 minutes

Process in a food processor

Add a spoonful of yogurt
