Making pudina is easier than you think. Got some stale bread? Then here's an easy to follow recipe for a classic Maltese bread pudding!

Ingredients

  • 500g stale bread
  • 600ml milk
  • 100g margerine
  • 3 eggs beaten
  • 200g sugar
  • 70g cranberry and raisin mix
  • rind of 1/2 lemon
  • rind of 1 orange
  • 100g sultanas
  • 100g currants
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 1 stp nutmeg
  • 40g cocoa powder
  • 40g drinking chocolate
  • 1tsp vanilla essence
  • sesame seeds (on top)

Instructions

Preheat the oven at 180c

Cut the bread into pieces, and place in a bowl

Add the milk and allow bread to soak for 30 minutes

Mix all the other ingredients in a bowl, add the bread and stir until mixture is well combined

Pour the mixture into a pre-greased baking dish

Sprinkle sesame seeds on top

Cook at 180c for 50 minutes

Notes

The Pudina may be eaten warm or cold
